Haleem

Ingredients:haleem
Crushed wheat – ½ kg (soaked 1 ½ hour)
Meat – 1kg (can be beef, lamb or chicken)
Chana daal – 1 cup (boiled and mashed)
Ginger garlic paste – 2 tbsp
Onion – 3 medium (thinly sliced)
Garam masala powder – 1 tsp
Turmeric powder – 1 tsp
Red chilli powder – 1 tbsp
Coriander powder – 1 ½ tbsp
Soda – ¼ tsp
Salt – according to taste
Ghee or oil – 1 cup
Masala for garnishing:
Mint – 1 bunch (only leaves thinly chopped)
Fresh coriander – 1 bunch chopped
White zeera – 1 tbsp (fried and grinded)
Green chillies chopped – 6
Ginger – 2 tbsp thinly slices
Garam masala powder – 1 tbsp
Lemon – 4 cut in 4, 4 pieces
Onion – 2 thinly slices
Method:
Take pan and put meat, ghee or oil and all the spices and cook on low heat. Take another pan and put wheat and boil with lots of water, stir occasionally, when it will begin to form then add soda. Cook well until done, then put in meat and cook on low heat.
When the mixture is cooked well and mixed well, put daal and 2 cups of water and mix them well and put on dum. During dum put green masala, ginger flaks andgaram masala.
Take small pan, put oil or ghee and put onion and fry until brown then take it out from oil and spread on newspaper. Serve haleem with green masala, lemon slices, and fried onion

For garam masala:Moroccan Beef Kebab Skewers
Dry coriander – 2 tsp                 White zeera – 1 ¼ tsp
Clove – 6                                    Black pepper – 8
Big cardamom – 1 or 2               Small cardamom – 5
Heat up above ingredients and grind them.
Onion – 2                                    Oil – 3 tbsp
Meat  – 1 kg                                 Red chilli powder – 2 tsp
Ginger, garlic paste – 2 tsp          Salt – as taste
Yogurt – 4 tbsp                            Ghee – 1 ¼ tsp
Lemon juice – 1 ½ tbsp
Method:
Take a pan, put oil in it, heat up and put onion and fry until light brown, then put meat, red chilli powder, ginger, garlic paste and water and cook until meat is done and water is dry properly, then put grind garam masala and salt and mix well. Now put meat on skewers.
Now take a bowl and put yoghurt, ghee and lemon juice, mix well and apply on skewers with brush and grill or BBQ.
Also can be served without yoghurt mixture as it is with parathas or zeera pulao.

Ingredients:
Mutton  – 1 kg
Onion – 3
yogurt – 1 cup
oil – as required
White zeera – 2 tsp
Black pepper – 1 1/4 tsp
Ginger – 1/2 tbsp
Garlic – 1/2 tbsp
Salt  – according to taste
Ginger flaks – 1 tbsp
Red chilli powder or Red Crushed chilli – 1 1/2 tbsp
For garnishing – tomato, mint, lemon, ginger flaks and green chillies
Method:
Take a bowl and put meat and toss with oil and heat up griddle pan or tawa and put meat and give a bit brown colour and transfer back in bowl and put onion skin then put burned charcoal and put 1/2 tsp oil and coverd, now cut onion halves and do same thing like you did with meat and put in meat.
Now take 1/4 cup yogurt from 1 cup and put white zeera, black pepper, salt, ginger, garlic and oil mix well and put in meat and leave it for 2 hrs.
Now put this meat in pan and cook until done,then take a wok and put oil and ginger flaks and put meat andcook on high heat, after 5 min put red chilli powder and cook until water dry, then put remaining yogurt (mix oil) and cook well until done. Then serve with tomato, mint, green chillies, lemon and ginger flaks.
